De oogst gebeurt in verschillende beurten, de tries, die telkens voor een andere wijn worden gebruikt. De druiven voor deze Villamarta komen uit de derde trie, worden

100% palomino fino van de El Corregidor wijngaard in het hart van de pago Carrascal. Geoogst in 2015 en gebotteld in 2024. De bodem bestaat uit dunne lagen die als een pak kaarten op elkaar zijn gestapeld, vandaar de naam van het project Barajuela. Stokken van meer dan 40 jaar oud. 

De oogst gebeurt in verschillende beurten, de ‘tries’, die telkens voor een andere wijn worden gebruikt. De druiven voor deze Villamarta komen uit de derde trie, worden enkele dagen gedroogd in de zon (asoleo) om het suikergehalte op te drijven. Door deze intensieve behandeling kan men een sherry maken zonder de basiswijn te versterken (15°). De most gaat ongefilterd in de vaten waar hij verder gist zonder echte temperatuurcontrole. De wijn werd geselecteerd uit 4 vaten en bleef onder flor gedurende 9 jaar. In sherrytermen kan Villamarta omschreven worden als een 'fino amontillado', een wijn dus op de grens van biologische en oxidatieve opvoeding.

Willy Pérez beschouwt Villamarta als het nec plus ultra van het Barajuelaproject. De wijn combineert kracht en intensiteit met finesse, complexiteit en elegantie. 

Willy Perez gebruikt de terminologie van Palmas, Cortados en Rayas uit de 19de eeuw aangezien deze dichter aansluiten bij de wijngaard en het oogstjaar. Deze wijnen gaan niet in een solera en dus blijft de link met het terroir intact.

Ook Gonzalez Byass heeft een reeks van Palmas op de markt gebracht, maar wat is nu de definitie van deze Palmas? Het zijn in elk geval wijnen opgevoed onder flor (statische biologische opvoeding zoals in de Jura) van één oogstjaar en één wijngaard waarbij:

1 palma => jonge wijn (3-5 onder flor) (ex Barajuela & Caberrubia)

2 palma => wijn volledig uitgerijpt onder flor (7-8 jaar onder flor)

3 palma => wijn waar flor net is verdwenen (9-10 jaar onder flor) (ex Villamarta) vegelijkbaar met fino amontillado

4 palma => zeer oude wijn voornamelijk oxidatief opgevoed (vergelijkbaar met amontillado VORS)

De palmas benaming is niet goedgekeurd door de consejo regulador vandaar dat deze wijnen als tafelwijn op de markt komen.

Gonzalez Byass gebruikt telkens het woord 'Fino' of 'Amontillado' om in orde te zijn met de regelgeving van de consejo regulador.

The Perfect First Shoe! Worth the Price.
My little one was just starting the stand/learning to walk and we wanted something to protect his feet while we were out of the house. Since babies/toddlers grow out of their shoes so quickly, I tried desperately to find shoes that didn't cost more than $20. Save yourself time and avoid wasting money on shoes that don't stay on. Just buy these shoes!
