HOW TO STORE YOUR STARTER CULTURE

• Store the starter culture in the refrigerator until you’re ready to activate it
• Use the starter culture by the date on the bag

• Distilled white or rice vinegar

Equipment
• Stainless steel pot that can hold up to 2 quarts with lid (avoid aluminum)
• Towel or hairdryer
• Stainless steel, silicone, or plastic colander (strainer)
• Large bowl
• Thermometer
• Dehydrator or insulated container with heating pad
