Domaine Luquet, opgericht in 1878, behoort tot de vaste namen in de Mâconnais als het gaat om karaktervolle Chardonnay. Met tientallen percelen verspreid over de beste terroirs van Pouilly-Fuissé weet het huis elk jaar opnieuw te verrassen. De cuvée 'Terroir' is een expressieve selectie die het unieke karakter van verschillende plots uit Fuissé, Solutré en Vergisson samenbrengt in één uitgebalanceerde wijn.

Wijngaarden en regio

De druiven voor deze Pouilly-Fuissé zijn afkomstig uit verschillende hooggelegen wijngaarden in de dorpen Fuissé, Solutré en Vergisson. Deze plots liggen op hellingen met een uitstekende zuid- en zuidoostexpositie en kalkrijke bodems die zorgen voor spanning en diepgang. Dankzij de combinatie van hoogte en bodemstructuur levert dit jaar op jaar een wijn op met verfijnde zuren en minerale intensiteit.

Vinificatie en rijping

De oogst vindt handmatig plaats, waarna de druiven zorgvuldig worden geselecteerd. De vergisting gebeurt temperatuurgecontroleerd in roestvrijstalen tanks. Daarna rijpt de wijn zes maanden op fijne lies, zonder houtopvoeding. Dit behoudt de precisie, puurheid en frisse signatuur van de Chardonnay, met een subtiele romigheid door de rijping op gistcellen.

Proefnotities en serveersuggesties

De wijn is lichtgoud van kleur met een levendig aroma van citrus, witte bloesem en kalksteen. In de mond proef je frisheid en verfijning, met een elegante structuur en een minerale afdronk. Perfect bij verfijnde visgerechten, coquilles of een tartaar van zeebaars. Serveer tussen de 10 en 12 °C.

This was my first book I have read by this particular author. I had spent some time looking for a comphrensive approach to Cyber Security and found many other texts to be lacking. Certain aspects are well documented, but no single source that brought it all together. This is exactly what First Principles brings to the table. As a practicioner that looks for better ways to formulate the objectives of SecOps Use Cases I have found the methods presented in this book to be immensely helpful. I have also given copies aways as a gifts to students who are just entering the field as this is by far the best intro to the long history of Cyber Security that combines the best direction for the future. The historical context that the author brings through first hand experience is beyond a treasure trove. It has been said many times in cheezy ads, but honestly, if you only read one book on Cyber Security make it this one.
