Het plaatselijke klimaat, continentaal met een Atlantische invloed, dwingt de wijnstokken tot diep in de ondergrond te reiken op zoek naar water. Tijdens het wijnmaakproces vindt in de eerste fase een koude maceratie voor 8 tot 12 uren plaats. Na een pneumatische persing wordt de alcohol gefermenteerd bij lage temperatuur in roestvrijstalen vaten en laat men de wijn rijpen op de lie tot deze is geklaard. Daarna wordt de wijn gefilterd en gebotteld wordt.
Hoge intensiteit, elegant, fris en complex. De wijn heeft een uitgesproken fruitige toon die het bereik van wit fruit (peer, perzik), citrus en passievrucht overspant. Hints van venkel en garrigue met een basis van balsamico en anijs.

The book contents are good. Format? Not so great/

The text of this volume is exhaustive, but the photos are substandard. These need some enhancement and a lot of enlargement. Due to its its extreme weight, the book should have been issued in at least two volume, possibly three,. The third volume could profitably be devoted to enhanced photos: those used seem to adhere to the principal that a photo is worth <100 words.
