Carpaccio van hertenfilet, rucola en appel

 

ingrediënten

  • Hertencarpaccio
  • 25 g pistachenoten, gehakt voor de vinaigrette
  • 1 eetlepel aceto balsamico
  • 2 theelepels tafelsuiker
  • 2 eetlepels extra vergine olijfolie
  • 1 eetlepel walnotenolie voor de appel
  • 2 Granny Smith, geschild en klokhuis verwijderd
  • klontje boter
  • takjes tijm om te garneren
  • handje rucola
  • 40 g geschaafde oude kaas

 

bereiden

Doe de balsamico in een kom, met de suiker en een snufje zout. Voeg al kloppend de olijfolie en walnootolie toe.

Verdeel de appel in 12 partjes. Verhit de boter in een koekenpan met antiaanbaklaag. Bak de appelpartjes op een hoog vuur rondom bruin. Voeg tijdens het bakken suiker en tijm toe. Haal ze uit de pan en doe over op keukenpapier of een schone doek.

Bestrijk het bord met de vinaigrette. Haal de carpaccio uit de koeling en bestrooi met zout, peper en pistache. Leg op ieder bord een krans van plakjes appel. Meng de rucola met wat vinaigrette en leg op de carpaccio. Garneer eventueel nog met de kaas.
