Allegrini Valpolicella Classico D.O.C.

Al sinds de 16e eeuw behoort Allegrini tot de absolute top van de Valpolicella. Hun Valpolicella Classico is een springlevend bewijs van hoe levendig, sappig en karaktervol deze klassieke appellatie kan zijn. Geen zware stijl, maar een frisse rode wijn die perfect het unieke terroir van de heuvels rondom Fumane tot uitdrukking brengt.

Wijngaarden en regio

De druiven komen van wijngaarden in de Valpolicella Classico-zone, waaronder de Monte dei Galli-heuvel. Deze wijngaard ligt op 200 meter hoogte, met een zuidoostelijke expositie en bodems rijk aan klei en kalksteen. Dat levert druiven op met een mooie balans tussen frisheid en structuur. Dankzij het heuvelachtige terrein en continue monitoring van het microklimaat weet Allegrini keer op keer een uitzonderlijk gezonde oogst binnen te halen, ondanks een warm en onregelmatig groeiseizoen.

Vinificatie en rijping

Na de handmatige oogst eind september ondergaan de druiven een fermentatie van 9 dagen in roestvrijstalen tanks, bij temperaturen van 25 tot 31 °C. De malolactische omzetting vindt ook plaats in RVS, waarna de wijn blijft rusten tot februari. Vervolgens rijpt de wijn nog minimaal twee maanden op fles. Er wordt bewust geen hout gebruikt, zodat het pure fruitkarakter van Corvina en Rondinella volledig behouden blijft.

Corvina Veronese – Monte dei Galli
70% van de blend. Geeft florale tonen, elegantie en sappige kers.

Rondinella – Monte dei Galli
30%. Rondinella zorgt voor extra fruit, zachtheid en structuur.

Proefnotities en serveertips

In het glas fonkelt robijnrood met geuren van kersen, wilde aardbeien en een hint van viooltjes. De smaak is fris en soepel, met zachte tannines, levendige zuren en een lichte kruidigheid. Perfect bij kalfsvlees, pasta met tomatensaus of antipasti. Serveer rond 14–16 °C.

The best no sugar natural fiber
Even if you have no problems with your dietary system, fiber is an excellent way to protect your lower GI system. I use the no sugar version as I want the fiber, but I want the extra carbs in the regular version. Regular no sugar is fine, and has no problems with taste. Every so often, I treat myself to this better stevia sweetened version. I don’t take either one 3 times a day, as recommended, but I do take it every morning. If you like the regular sugar free version, give this a try. Since I take it every day, I do like occasionally switching to the better version. Read the labels of your fiber supplement products, if you take them. Very few give you the amount of fiber that this does, and you control exactly how much fiber you want. If you read up on the benefits of adding to your daily fiber intake, you will wonder why you haven’t been adding this to your daily healthy supplements This is a very effective way to protect yourself, and most other products don’t come close!

Not real sweet, but no sugar
I have been taking Metamucil with real sugar regularly for 20+ years. I became concerned about the amount of sugar I was consuming daily and cannot tolerate aspartame. So, I jumped to buy this when I saw Stevia. I quickly noticed that this version is not sweet. It’s sort of bitter. Also, the texture is different due to not having sugar granules mixed in. It also converts to a gel like texture quicker. I later noticed you use less of this product per serving than the one with sugar (read the label!). I have found the best way to take this is to very quickly (seconds) consume the serving after adding water. Don’t wait too long. I down it like taking a shot out of a shot glass followed quickly by a glass of water. After a while, I got used to the flavor. Overall, I am pleased I am consuming much less sugar and really don’t notice the change anymore.
