De wijnstokken Langs de glooiende heuvels van de Sakar berg, niet ver van Harmanli, op een hoogte van 130 meter, op kaneel en grijze bosgrond, telen we onze Cabernet Sauvignon, Cabernet Franc, Syrah, Chardonnay, Mavrud en Rubin druiven. Het druivenras Rubin vertoont in onze omstandigheden nog steeds een ongelijkmatige rijping van de pitten, ondanks het aanzienlijk hoge suikergehalte. Dit kenmerk kan meer uitgesproken zijn door de jonge leeftijd van de wijngaarden. Wanneer we rijpe fenolen in de pitten bereiken, resulteert dit in een aanzienlijk hoog suikergehalte. Daarom is Rubin voor ons het zoeken naar een evenwicht tussen rijpe fenolen en suikers in de druiven, wat zich weerspiegelt in het alcoholgehalte van de wijn. In 2021 voerden we specifieke bewerkingen uit op de groene scheuten om maximale schaduw voor de druiventrossen te garanderen.Tijdens de rijpingsperiode is er een gedeeltelijke rotting opgetreden die specifiek is voor Rubin. Aanvankelijk betrof het individuele bessen, maar geleidelijk aan verspreidt het zich in grotere mate. Hoewel een bepaald percentage gedroogde bessen het wijnmaakproces niet verstoort, streven we naar frissere fruitaroma's en dus naar een zo laag mogelijk percentage. De druiven werden geoogst op 5 september 2021. We selecteerden de frissere druiven uit de wijngaard voor ROSALEA Rosé en de rijpere voor Writer's Wine Rubin, waarmee we de eerste rode druiven voor de oogst en onze eigen productiebasis markeerden.
