Vleesch van Plante is vacuüm verpakt en kan daardoor tot maximaal een jaar bewaard blijven mits bevroren bij een temperatuur van minstens -18C. De houdbaarheidsdatum staat vermeld op de verpakking. Eenmaal ontdooid kan het vlees, mits vacuüm verpakt, 5 dagen in de koelkast bewaard blijven alvorens het te bereiden.

Recept

Een dag voor het diner: Kies voor een mooi stuk dunne lende (entrecote) of rosbief. Laat het vlees op kamertemperatuur komen door het minstens een uur voor het braden uit de koeling te halen. Dep droog en wrijf in met zout en peper. Begin met het verhitten van een flinke klont roomboter in een braadpan op hoog vuur. Voeg 2 teentjes geplette knoflook en een paar takjes rozemarijn toe. Als het schuim is weggetrokken, braad je het stuk rosbief rondom bruin. het beste is om dit met een keukentang te doen, zodat je niet in het vlees hoeft te prikken. Draai dan het vuur lager en laat de rosbief braden met de kernthermometer (47 graden voor rosé) erin. Doe dit met het deksel schuin op de pan. De smaken van de knoflook en rozemarijn trekken in het vlees.

Als de kernthermometer de juiste temperatuur heeft bereikt, haal je het vlees uit de pan en wikkel je dit in aluminiumfolie. Laat het vlees afkoelen op het aanrecht, in de folie. Zodra afgekoeld, zet in de koelkast op een bord om de volgende dag te snijden en te serveren. 

Vang de jus op en bewaar afgesloten in de koelkast tot verder gebruik. Heerlijk om later bij de aardappelen te eten.
