Voorheen vijf dagen, maar terug naar twee om de wijn fris en elegant te houden. Opvoeding op staal houdt de energie en doordrinkbaarheid hoog. Perzik, kamille en witte bloemen, gepaard met een fijne sappige textuur en een versgemalen peper in de afdronk. Land Streek: Duitsland Wrttemberg

- Druiven: chardonnay, kerner, müller-thurgau, riesling, silvaner, pinot blanc, johanniter 
- Producent: Kleines Gut  
- In de wijngaard: Met de hand geoogste druiven. Bestrijding wordt alleen gedaan met natuurlijke producten. De bodems worden versterkt met eeuwenoude compost en steenpoeder. 
- In de wijnkelder: Druiven gekneusd en 2 dagen schilcontact gehad, daarna zachtjes geperst met een oude pers en gerijpt in staal voor 6 maanden. Gebotteld met zwaartekracht. Soms een mespuntje sulfiet bij de most of voor het bottelen.
