Giallo paglierino chiaro. Al naso si evidenziano profumi di fiori di camomilla ed erbe aromatiche, tocchi floreali, note di frutta a polpa bianca su un sfondo minerale; al palato è fresco, invitante, piacevolmente sapido.

Sottobanco è un vino bianco prodotto a Gradoli, sulle sponde del lago di Bolsena, dall'azienda vinicola di Andrea Occhipinti. Ricavato da uve procanico, da vigne poste su suoli ricchi di lapilli vulcanici, in seguito alla pressatura a grappolo intero e alla fermentazione spontanea innescata da lieviti indigeni, il vino affina sei mesi in acciaio e almeno due mesi in bottiglia.

Si abbina con primi a base di verdure, fritture e secondi di pesce.
