The Blades

All three blades are forged from layered 1095 high-carbon steel and 15N20 nickel alloy. The two steels are stacked, heated, and hammer-welded into a single solid billet. The fire pattern forms during the forging and grinding process irregular, flame-shaped contrast lines that spread across the blade surface after acid etching. Unlike raindrop or ladder patterns, fire pattern Damascus produces an asymmetric, organic formation that looks different on every knife. No two blades in this set carry the same surface pattern.

Heat treatment brings each blade to 58–60 HRC. That hardness holds a sharp working edge through sustained daily prep without becoming brittle under regular cutting load.

What Each Knife Does

The 14-inch gyuto is the longest blade in the set and the primary daily prep knife. It slices proteins, breaks down vegetables, minces herbs, and handles the full range of general kitchen work during active cooking. The curved belly suits both rocking cuts and long pull strokes through larger ingredients.

The 12-inch santoku handles precise vegetable work. Its flat edge makes full board contact on each push cut stroke — cleaner slices through produce, more consistent cuts on soft proteins, and better control during repetitive chopping tasks than a curved belly allows.

The 12-inch utility knife bridges the gap between the gyuto and a paring knife. It trims fat from proteins, portions smaller cuts, slices fruit, and manages mid-size prep tasks where the gyuto is too large and a paring knife is too short.

Handle Material

Each knife is fitted with a black resin handle. Resin handles are cast and cured under pressure, producing a fully sealed, non-porous surface that resists moisture, food oils, and bacteria completely. Black resin does not warp, crack, or fade under kitchen conditions. The surface stays firm and consistent in hand — equally secure during dry and wet prep.

The black finish creates a sharp visual contrast against the fire pattern Damascus blade and the brass bolster, giving each knife a clean, refined appearance without surface texture that traps residue.

Brass Bolsters and Full Tang Construction

Solid brass bolsters sit at the blade-to-handle junction on each knife. Brass adds forward balance weight at the grip point, acts as a natural finger guard during chopping strokes, and develops a warm patina over time that deepens the visual contrast between blade and handle. The fit between brass and resin is flush — no gap, no movement.

Every knife is full tang. The blade steel runs the complete length from tip to handle end, pinned through the black resin for permanent, solid construction. Full tang eliminates blade flex at the junction and keeps the weight distributed evenly across the full knife length.

Excellent choice for long oil change intervals.

I'm a former dealership mechanic and for years I used whatever we had in the bulk tank which was usually Valvoline conventional. My last job was at a German car dealership. Castrol was the oil recommended by the German manufacturers and that's when I started using Castrol. In my experience Castrol is an excellent oil. My 2014 Ford just rolled over 242,000 miles and even with factory 10,000 mile oil change intervals, from what I can see through the oil fill the top end of the engine is still clean. I've never had to remove the valve cover. It's using about a quart between oil 10,000 mile oil changes which is great because when it was new it used about a 1/2 quart between changes.
