The Hamaguri grind, also known as a convex/apple seed grind, is an edge geometry for chef’s knives, particularly those of Japanese origin. Named for its resemblance to a clam shell. The shape provides greater support behind the cutting edge and minimizes friction between the steel and material being cut to allow for faster, cleaner, and smoother cutting and slicing.
