Schonende Pressung, temperaturkontrollierte Gärung (ca. 18 °C). Ausbau: 7 Monate Feinhefe im Edelstahl, anschließend 3–4 Jahre Flaschenreife in Kreidekellern. Fokus auf Klarheit, Spannung, Terroir.
